Re request for Rose Water Pudding - I was going through the Great Meal
in Minutes - Egg and Cheese menus cookbook and came across the
following recipe for Rose Water Pudding with Tangerine Crescents. Hope
this is what your friend is looking for Pete.
Rose Water Pudding with Tangerine Crescents
3-1/2 ounces marzipan
1 envelope plain gelatin
2 tablespoons superfine sugar
2 cups half-and-half or light cream
3 tablespoons rose water
1-1/2 cups heavy cream
1-1/2 cups fresh tangerine sections, or 11-ounce can mandarin oranges,
drained
1/4 cup minced blanched pistachio nuts
4 sprigs mint, washed and dried for garnish (optional)
Cut the marzipan into small pieces and put in food processor with steel
blade, or blender. Combine marzipan, gelatin, sugar, 1 cup
half-and-half or cream, and rose water. Process until smooth about 20
seconds. Pour in remaining half-and-half or cream and process about 10
seconds until incorporated.
Transfer the mixture to medium heavy pan, cook over medium-low heat, stir
often, for about 12 to 15 minutes, or until the gelatin dissolves.
Chill bowl and beaters for whipping the heavy cream.
Fill a large container with crushed ice or water and ice cubes. Set
the pan with marzipan mixture in the ice bath for 10 to 15 minutes. Do
not let any water spill into the marzipan mixture. Whisk the mixture
frequently, until thick and syrupy.
Whip the heavy cream to soft peaks. Takes about 2 minutes at high
speed on your mixer. Fold the cream mixture into the marzipan
mixture. Cover and chill several hours until slightly firm or overnight.
Arrange tangerine sections around 4 desert plates. Mound pudding in
center, scatter pistachios on top, and garnish with mint sprigs.
